chocolate mug cake

my wife actually makes these. highly recommend throwing a scoop of Blue Bell vanilla ice cream on that bad boy right out of the microwave.

ingredients

  • 4 tbsp all-purpose flour
  • 4 tbsp granulated sugar
  • 2 tbsp cocoa powder (unsweetened)
  • 1 egg
  • 3 tbsp milk
  • 3 tbsp vegetable oil
  • Small splash of vanilla extract
  • Pinch of salt

instructions

  1. Combine ingredients: Add all ingredients directly into a large microwave-safe mug (at least 12 oz capacity).

  2. Mix thoroughly: Stir with a fork or small whisk until completely smooth with no lumps. Make sure to scrape the bottom and get all the dry ingredients incorporated.

  3. Microwave: Microwave on high for about 90 seconds. The cake will rise significantly - that’s normal!

  4. Cool slightly: Let the mug cake cool for 1-2 minutes before eating. It will be very hot!

  5. Enjoy: Eat directly from the mug with a spoon, or carefully turn out onto a plate.

notes

  • The cake will puff up and rise above the rim of the mug while cooking - this is completely normal and expected!
  • Use a large mug (12-16 oz) to prevent overflow
  • Don't overcook - center should be just set but still moist
  • Microwave power varies - start with 75 seconds if your microwave is powerful
  • Top with vanilla ice cream for a molten lava cake effect
  • Mocha: Add 1/2 tsp instant coffee or espresso powder
  • Mint Chocolate: Add 1/4 tsp peppermint extract
  • Use butter instead of oil for richer flavor (melt it first)
