ingredients

  • 4 tbsp melted butter
  • 4 tbsp brown sugar
  • 4 tbsp granulated sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 8 tbsp all-purpose flour
  • Pinch of salt
  • 4 tbsp chocolate chips

instructions

  1. Mix wet ingredients: In a small bowl, mix melted butter, brown sugar, granulated sugar, egg yolk, and vanilla extract until smooth and well combined.

  2. Add dry ingredients: Add flour and a pinch of salt. Stir until just combined - don’t overmix!

  3. Add chocolate chips: Fold in the chocolate chips, distributing them evenly throughout the dough.

  4. Divide into mugs: Divide the dough evenly between 2 microwave-safe mugs. Press down gently to flatten the tops.

  5. Microwave: Microwave each mug separately for 40-60 seconds. Start with 40 seconds and add time in 10-second increments if needed.

  6. Cool briefly: Let the cookies cool in the mugs for about 1 minute before eating - they’ll be very hot!

notes

  • The cookie should look slightly underdone in the center when it's perfect - it will continue cooking as it cools
  • Microwave power varies - start with less time and add more if needed
  • Don't overcook or the cookie will be tough and dry
  • Top with vanilla ice cream while still warm
  • Using just the yolk (not the whole egg) creates a richer, denser cookie that holds together better in the mug. The white would make it too cake-like.
  • Peanut Butter variation: Replace 2 tbsp butter with 2 tbsp peanut butter
  • Double Chocolate: Add 1 tbsp cocoa powder and reduce flour to 7 tbsp
