simple chocolate chip cookies
a bitch of a woman said I couldn't figure out her cookie recipe. anyway, here it is.
ingredients
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (or substitute with more white sugar)
- 1/2 cup (1 stick) butter, softened
- 2 eggs
- 1/2 cup chocolate chips
- Pinch of salt
- 1/2 tsp vanilla extract (optional but recommended)

Preheat oven: Preheat your oven to 375°F and line a baking sheet with parchment paper or lightly grease it.

Cream butter and sugars: In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Add eggs and vanilla: Add the eggs and vanilla extract (if using). Mix until well combined and smooth.

Mix in dry ingredients: Add the flour, baking soda, baking powder, and a pinch of salt. Mix until just combined - don’t overmix!

Fold in chocolate chips: Gently fold in the chocolate chips, distributing them evenly throughout the dough.

Scoop onto sheet: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.

Bake: Bake for 9-11 minutes. The cookies should look slightly underdone in the center with golden edges - they’ll continue cooking as they cool.

Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
notes
- Butter should be softened to room temperature, not melted
- Don't overbake! Slightly underdone centers = chewy cookies
- For crispier cookies, bake for 11-12 minutes. For chewier, bake for exactly 9 minutes.
- No brown sugar? Use all white sugar - they'll be slightly less chewy but still great
- Use half semi-sweet, half milk chocolate chips for variety
- Sprinkle with sea salt before baking
- Room temperature: 3-5 days in an airtight container. Freeze dough balls or baked cookies for up to 3 months.
