another mug cake. this one is really good just by itself with a glass of milk, but ice cream is welcome. ice cream rocks. shit, maybe just put ice cream in a mug.

ingredients

  • 4 tbsp all-purpose flour
  • 3 tbsp granulated sugar
  • 1/4 tsp baking powder
  • Pinch of salt
  • 3 tbsp milk
  • 2 tbsp melted butter (or vegetable oil)
  • 1/4 tsp vanilla extract
  • 1 egg yolk (or 2 tbsp beaten whole egg)
  • Optional for Funfetti: 1-2 tbsp rainbow sprinkles

  1. Mix dry ingredients: In a microwave-safe mug (at least 12 oz), combine flour, sugar, baking powder, and salt. Mix well with a fork.

  2. Add wet ingredients: Pour in the milk, melted butter, vanilla extract, and egg yolk. Stir thoroughly until completely smooth with no lumps.

  3. Add sprinkles (optional): For funfetti cake, fold in the rainbow sprinkles now.

  4. Microwave: Microwave on high for 60-90 seconds, depending on your microwave’s power. Start with 60 seconds and add time if needed.

  5. Cool and serve: Let cool for 1 minute before eating. The cake will be very hot!

notes

  • Use just the egg yolk for a richer, denser cake. Use whole egg for lighter, fluffier texture.
  • Start checking at 60 seconds - don't overcook or it will be dry
  • Melted butter creates richer flavor than oil
  • Funfetti: Add 1-2 tbsp rainbow sprinkles to batter
  • Lemon: Add 1/4 tsp lemon extract and zest of 1/2 lemon
  • Birthday Cake: Add sprinkles and top with frosting and a candle!
  • Use brown butter for nutty flavor, or swirl in Nutella before microwaving
